Tasty Collard Greens with Bacon

Ingredients

  • 1/4 tablespoon olive oil
  • 1 slice bacon
  • 1/5 small onion, chopped
  • 1 cloves garlic, minced
  • 1/3 pound fresh collard greens, cut into 2-inch pieces
  • 1 cup chicken broth
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon brown sugar
  • 1/4 teaspoon salt
  • 1 pinch pepper
  • 1 pinch red pepper flakes (optional)

Instructions

  1. Heat oil in a large stir fry pan over medium-high heat. Add bacon and cook until crisp, 5-7 minutes. Remove bacon from pan, crumble or chop, and set aside.
  2. Add onion to pan and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they begin to wilt. Add bacon back into the pan.
  3. Pour in chicken broth, apple cider vinegar, and brown sugar, and season with salt, pepper, and pepper flakes if desired. Reduce heat to low, cover, and simmer until greens are tender, about 30 minutes.
  4. Serve warm and enjoy!
